Professional Culinary Arts students of the Magsaysay Center for Hospitality and Culinary Arts (MIHCA) were hailed as the Ultimate Chef Warriors in the Chef Wars competition at the recently concluded 10th National Food Showdown held last October 19-21, 2016 at the Camp John Hay, Baguio City, Philippines.
Chef Wars, considered the main event of the National Food Showdown, is a 60-minute live cooking contest. MIHCA’s winning trio—Carla Felize C. Cruz, Prince Jeffrey C. Tan and Jaime Bañas—represented Team Luzon and bested the groups of Shangri-La's Mactan Resort and Spa of Team Visayas and Monster Kitchen Academy of Team Mindanao. Team Luzon was supported and coached by MIHCA Instructors, Chef Mike S. Navarra and Chef Joan D. Pineda.
MIHCA students prepared a 3-course masterpiece with shrimp as the main ingredient—Anchovy Glazed Shrimp set on Vanilla Scented Beignets, Open Face Thermidor, Salad, Calamansi Emulsion, Potato Leek Soup and Herb Soil as hot appetizer; Shrimp Flan with Calamansi Gelée, Herb Marinated Shrimp, Pickled Vegetables, Coral and Mango Aioli as cold appetizer; and Shrimp and Lapu-Lapu Roulade, Potato Fritters, Root Vegetables with Bacon Beurre Blanc with Chive Oil as the main course.

Magsaysay Center for Hospitality and Culinary Arts (MIHCA) bagged four awards at the recently concluded Philippine Culinary Cup 2014 held at the SMX Convention Center last August 6 to 9.
MIHCA student chefs Nadine Kristine D. Villafane, Randy C. Ramirez and Camille Rael C. Bitara won the gold medal for the Filipino Cuisine Challenge. Their winning menu was Tinola Rice Croquette; Shrimp Cake (Okoy) with Sinamak Vinaigrette; Cebu Lechon with Liver Sauce and Coconut Pumpkin and String Bean Puree; Hearts of Palm; and Green Papaya Salad with Palawan Honey Dressing.
MIHCA instructors Chef Mike Navarra, Chef Mike Jacinto, Chef Shasahi Prakash and Chef Joan Fajardo snagged the silver medal for the Dream Team Professional category. Their winning menu was Poached Brill in Cirio Chorizo Chili Oil, Hazelnut Muffin, Uni Emulsion, Corn Salsa and Pear Marmalade; Beef Flank & Foie Gras wrapped in Cured Ham, Oxtail Ragu & Zucchini Timbal with Balsamic and Morel Jus; and Bale Pliable Ganache with Chocolate Soil and Yogurt and Mint Ice Cream.
Chef Joan Fajardo also acquired the bronze medal under the Dress the Cake category for her Cherry Blossom Cake and another silver medal for the Wedding Cake category.

During the visit, Mr Foschi also witnessed the RFE Technical Trainees performing a dance number using the song “Bonjourno Smile,” as a student performed flairtending right after.
Mr. Foschi inspired everyone by giving a heartwarming talk to the RFE Technical delegates who will soon embark Costa Crociere.

Aldenese, Cook Eat Now’s Anzenne Roble, Dante Alighieri’s Marga Ocampo, and Travel Life’s Mitos Lusterio and Lorraine Banta from Scanmar.
Guests were introduced to MIHCA’s new Institute Director Mr. Reny C. Garcia. Prior to being appointed as MIHCA Institute Director, Reny was the Vice President for the Cruise Group of Magsaysay Maritime Corporation.
Guests were also given a tour around the MIHCA facilities and were engaged to participate in different activities. In Manila Campus they experienced Chicken Trussing led by Chef Mos Grau, Cupcake decorating by Chef Nap Carbonell, Art of Towel Decorating by Sir Allan Dollesin and Barista and Cocktail Demo by Sir Ernie Mesina. Guests were given cocktail drinks at MIHCA’s fine dining restaurant Illumine. Then they also visited the state of the art Computer Lab, language training and IATA travel courses were discussed. And finally, the guests had a sumptuous lunch at the Robert Hall.
In Makati Campus, the guests were able to witness Cocktail Demo, Plating and Blind Tasting activity and were toured around the kitchens, butchery classroom, housekeeping mock up rooms and the coffee bar. After which they were also served with an opulent lunch.
